Buckeye Brownies Recipe Ingredients:
For the brownies:
- ¾ cup of sugar
- 3 eggs
- ¼ cup of oil
- 2 tbsp of butter
- 4 oz Dark Chocolate Couverture
- 1 cup of all purpose flour
- ¼ cup of Rainforest Bulk Cocoa Powder
- A pinch of salt
For the top layer:
- 2 cups of peanut butter
- 1 cup of powdered sugar
- 4 oz of Organic Dark Chocolate
- 1 cup of heavy cream
Buckeye Brownies Recipe Instructions:
For the brownies:
- Preheat the oven to 350 degrees.
- In a large bowl, cream together the sugar, salt and eggs until light and fluffy.
- Add the butter and oil. Keep whisking to combine really well the ingredients.
- Pour the melted Dark Chocolate into the bowl and stir. You can melt the chocolate using a double boiler technique or in the microwave. If you are going to use the microwave, heat the chocolate for 10 seconds, stir and repeat. It is important to melt it slowly to avoid burning it.
- Sift the cocoa powder and all purpose flour into the bowl. Don’t forget to sift these ingredients to avoid lumps in the batter.
- Don’t over mix your brownie batter unless you like the cake like texture.
- Bake your brownie for 12-14 minutes. Don’t over bake or they will end up too dry.
- Set aside to cool down. Leave them in the pan.
For the top layer:
- In a medium bowl, combine your peanut butter and powdered sugar. You can use either chunky or creamy peanut butter, pick your favorite. Whisk well.
- In a small saucepan, heat your heavy cream until boiling.
- Pour the hot heavy cream over the Organic dark chocolate and wait 5 minutes before stirring.
- When passed the five minutes, stir really well and you’ll end with shiny chocolate ganache.
- Take your pan of brownies and first, add an even layer of peanut butter mixture.
- Put them in the refrigerator for 10 minutes to set.
- When already set, add the ganache on top and put them back in the refrigerator for another 10 minutes. If you want to add any toppings or decorations over the ganache, do it before putting them in the refrigerator again.
- Your buckeye brownies are ready! Enjoy with friends and family.
