Directions
Orange Sheet Cake Directions
- Mix flour, baking powder and salt.
- Mix butter and sugar together in mixer with paddle attachment until light and fluffy.
- Add eggs slowly, scraping the edges as it is added.
- Mix in half of the dry ingredients, followed by half of the liquid ingredients. Repeat and do not over-mix.
- Spread the cake batter into 1/2 sheet tray and a 1/4 sheet tray. Bake at 325F until the cake springs back to the touch. Allow to cool before cutting.
Napa Ganache Directions
- Bring the heavy cream and orange juice to a boil.
- Pour hot mixture over the dark chocolate. Allow to sit for 1 minute before emulsifying.
- Use this ganache for layers between the orange sheet cake. Build the layers in a mold and allow to freeze before un-molding. Serve with grape compote.
Grape Compote Directions
- Bring orange juice, lemon juice, vanilla extract, granulated sugar, grape juice and 110g of fresh red grapes to a boil; reduce to simmer. Allow to simmer for 15 minutes and then add the rest of the fresh red grapes.
- Mix a little bit of the liquid from this mixture into the cornstarch to make a slurry.
- Add the slurry to the hot mixture and stir until thickened.
- If needed cook a little more until grapes are softened.
