Dark Chocolate S'mores Pie Recipe

Graham Cracker Crust

  • 160g Graham Cracker Crumbs
  • 70g Butter (melted)
  • 30g Granulated Sugar

Swiss Meringue

Directions

Graham Cracker Crust

  1. Mix graham cracker crumbs and sugar together.
  2. Pour melted butter in, half at a time.
  3. Mix until evenly coated.
  4. Spread into a pie tin and form into a crust.Bake for 10 minutes at 350°F, or until golden brown.

Chocolate Pie Filling

  1. Bring milk, sugar and heavy cream to a boil.
  2. Add just enough while hot to the egg yolks to get them warm. Mix continuously.
  3. Bring mixture back to boil, then simmer and add egg mixture to it while stirring constantly.
  4. Cook until slightly thickened then turn off heat. Strain over the organic 72% dark chocolate. Let sit for 1 minute then emulsify.
  5. Stir in vanilla extract and pour into the pre-baked crust.
  6. Refrigerate to set.

Swiss Meringue

  1. Over a hot water bath, on low heat, whisk egg whites and granulated sugar until 140°F.
  2. Transfer egg whites to a stand mixer. Add in cream of tartar. Using whip attachment, whisk on medium-high to a medium peak.
  3. Pipe onto the chilled pie and torch as desired. Garnish with choice (or all) of the dark chocolate, milk chocolate and/or white chocolate.
