Dark Chocolate S'mores Pie Recipe
Ingredients
Graham Cracker Crust
- 160g Graham Cracker Crumbs
- 70g Butter (melted)
- 30g Granulated Sugar
Chocolate Pie Filling
Swiss Meringue
Directions
Graham Cracker Crust
- Mix graham cracker crumbs and sugar together.
- Pour melted butter in, half at a time.
- Mix until evenly coated.
- Spread into a pie tin and form into a crust.Bake for 10 minutes at 350°F, or until golden brown.
Chocolate Pie Filling
- Bring milk, sugar and heavy cream to a boil.
- Add just enough while hot to the egg yolks to get them warm. Mix continuously.
- Bring mixture back to boil, then simmer and add egg mixture to it while stirring constantly.
- Cook until slightly thickened then turn off heat. Strain over the organic 72% dark chocolate. Let sit for 1 minute then emulsify.
- Stir in vanilla extract and pour into the pre-baked crust.
- Refrigerate to set.
Swiss Meringue
- Over a hot water bath, on low heat, whisk egg whites and granulated sugar until 140°F.
- Transfer egg whites to a stand mixer. Add in cream of tartar. Using whip attachment, whisk on medium-high to a medium peak.
- Pipe onto the chilled pie and torch as desired. Garnish with choice (or all) of the dark chocolate, milk chocolate and/or white chocolate.
