In our Rainforest Red Baking Cocoa, about 75% of the cocoa butter is pressed out, which results in producing the cocoa cake - a dense and hard low-fat chocolate disc. We grind up the cocoa cake to get Rainforest Baking Cocoa which is cocoa powder.
