Directions
- Temper and mold white chocolate into preferred shells. This white chocolate is not part of the ingredient listing above.
- Mix lime juice, glucose and butter into a pot and bring to light boil.
- Mix white chocolate and lime zest, then pour boiling lime juice, glucose and butter over it.
- Emulsify the ingredients and cool down ganache to 84°F.
- Pipe into pre-made white chocolate shells, and let sit overnight.
- Close the shells with more tempered white chocolate.
